Food retailer the Co-op has announced plans to open 100 of its smaller convenience stores across the UK within the next year. In total this is expected to create 700 full-time and part-time jobs. 200 of the jobs will be in Scotland where 25 of the new stores will be based. Half of the new stores will be based in South East England. The mutual already operates 2,796 stores across the UK and in addition to the new premises will refit 255 stores over the next year. The decision to open more stores follows the announcement that operating profits increased by 1.6 per cent in the year to January 2015.
